Work has become more challenging for me this school year due the makeup of the students. It seems we have a higher proportion of students with special needs than before.
Still, I’m glad to be back at work, following schedules and routines. They structure my days, helping me stay organized and disciplined.
There will be no more traveling in the near future, except for weekend getaways – what a relief!
Best of all, I’m starting to get active in the kitchen again, making home-cooked meals for the family.
Here’s last night’s dinner.
It’s Build-Your-Own Mediterranean Quinoa Bowls. Fresh, tasty, satisfying, and most of all, healthy!
And Now, More Healthy and Not So Healthy Stuff
