It’s turning out to be one crazy summer for my family and me!
First, my husband and I are getting ready to travel to the UK (again!) for the third time in roughly three months! This time, he’ll be working there, and I’m just tagging along to provide moral support. I’m like his service dog.
That doesn’t sound right. My husband just prefers having me by his side whenever he goes abroad, and I’m more than happy to be with him. We make a good team.
There, that sounds better! Anyway, after our UK trip, we’ll be entertaining several visitors and traveling with them to New York, Maryland, and Washington, D.C.
Then, we’ll all head to California to celebrate Disneyland’s 70th anniversary. Just kidding! We’ll be there for a wedding, not Disney.
Phew! Aren’t you tired just thinking about all of this? I know I am! So tired that I haven’t had the energy to cook. Plus it’s been too hot to be active in the kitchen.
So my plan is to prepare salads this weekend. I’ll start off with this Peach Prosciutto Salad, our perennial favorite.
And go from there.

So far I’ve made crumpets, and was trying to recreate the triple-cooked chips but I wasn’t fully committed to frying 3 times so they didn’t turn out as crispy as the ones we had at the Borough Market. We haven’t spent a lot of time in the south east, other than London. I’ll let you know if we’re ever in the area, thanks!

Have fun in the UK. I traveled for work to the Bahamas and my husband got to come along too. It was a nice break for him, and my work environment was pretty inspiring. Have a wonderful week!
