I’ve been home for almost a week, and I still haven’t found my groove on things.
So far, most of my time has been spent sleeping, watching TV, and watering my plants. It’s been so hot, like 90 degrees, making any exertion uncomfortable and sweaty! The week before we returned home, I heard it even got to 100+ degrees! What do you do when it’s that hot? I’d just sit around fanning myself.
Then I realized yesterday that Fiesta Friday was approaching, and not just any Fiesta Friday – it’s a 4th of July Fiesta Friday! So, I finally got up and started doing something meaningful – baking and cooking.
I kicked off the day with red, white, and blue scones.
It felt right since I was starting to miss English cream tea with scones. However, these were American scones, appropriate for a 4th of July celebration.
Later in the day, when everyone started looking for more food, I decided to be productive once again and made a pizza. But not just any pizza – a 4th of July pizza!
Bada bing, bada boom! I hate that phrase 😂
Now, my plan for today is to follow up on what I made with grilled meats: ribs, burgers, sausages, and more. What are you making today to celebrate Independence Day, Fiesta Friends?
