I almost forgot that Monday was Cinco de Mayo! That would have been unforgivable, especially since I own a food blog named Fiesta Friday.
Fortunately, my pantry and fridge were stocked with enough ingredients to make a last-minute Barbacoa Burrito Bowl.
It turned out pretty good, but I felt like something was missing.

That’s what was missing.
I will remedy the absence of the margarita by making it later today as soon as I get home from work. After all, today is Fiesta Friday, and Cinco de Mayo, as far as I’m concerned, is a week-long affair!
