St. Patrick’s Day sort of slipped by me this year. I found myself unprepared, which must have been the work of leprechauns playing tricks on me.
The week before I had prepared a Guinness Pork Stew, and was planning to make a special treat using edible “shamrock” leaves for the day itself. Why else, otherwise, would I be planting these weedy plants indoors?
They’re not true shamrocks, but they’re edible and resemble the typical commercial depiction of shamrocks. I was thinking of either pressing them onto sugar cookies or sprinkling them on top of some green pudding.
However, when the day finally arrived, other activities distracted me and I completely forgot about my shamrock plans, duh! Oh, well…
So, even though it’s practically a month away I’m moving on to Easter. You can never plan anything too early, and I hope I won’t forget to make this homemade candy when the time comes.
