Fiesta Friday #579

This may be somewhat off-topic for this blog, but I’m going to share it anyway.

Lately, not much gets done in my house because my husband and I have been glued to the TV, monitoring a YouTube channel dedicated to a pair of bald eagles.

We are both avid fans of Jackie and Shadow, the resident bald eagle couple in Big Bear Valley, Southern California. Over the years, we have closely followed their journey, which has included the loss of their chicks, the failure of their eggs to hatch, and disturbances from intruders.

While there are other eagle nests worth following, none is as captivating as Jackie and Shadow’s. There is something mesmerizing about their story. The beautiful location, the camera angles, and the actively responsive camera operators and channel moderators all contribute to the popularity of their nest.

After two consecutive years of non-viable eggs, they recently welcomed two “bobbleheads,” also known as baby eagles or eaglets. I personally prefer calling them bobbleheads! 😂

In the current uncertain political climate, this little corner of nature provides a much-needed sense of reprieve and peace.

Just so this post doesn’t become totally unrelatable, however, I’m also sharing this.

Gluten-Free Low-Carb Peach Buckle | FiestaFriday.net

Amidst the constant TV viewing, somehow I managed to make that Gluten-Free Low-carb Peach Buckle. I don’t know how, but I did. But then again, buckles are one of the easiest desserts to make.

It’s also one of those old-fashioned but reliably fool-proof recipes. I don’t know why I don’t make it more often. I should!

And Now It’s Time For Features!

Peanut Butter Frosting

Ladybird Appetizers

Dyed Potatoes for Easter Eggs

Slow Cooker Retro Cheesy Chicken

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
