I baked a pie, finally!
It’s been a while since I made my favorite dessert, which is a fruit pie. Specifically, a berry pie. The main reason is that I can’t resist a fruit pie and have been known to act irresponsibly, especially when there’s also vanilla ice cream around. I can easily inhale half a pie all by myself!
For this pie, I tried to make it slightly low-carb by reducing the sugar and using almond flour for the crumble topping. We’ll find out later when I cut into it and taste it if I was successful in making it as scrumdiddlyumptious as the traditional full-sugar, full-carb version.
In the meantime, I shall distract my attention away from the pie by playing the NYTimes online games. I play them ALL – Wordle, Connections, Strands, Sudoku, etc., and I play them daily! Is this an addiction or an obsession? Or both?

Thank you for featuring my Dark Chocolate Espresso Chip Cookies! Our eating habits are similar … we don’t have dietary restrictions, but I prefer to keep gluten at a minimum (so I can use it to “splurge” on the “good stuff” later ~ can’t tell the difference between GF pasta and lots of other things anyways). I really limit dairy too, not just b/c I’m lactose intolerant but because it just bloats everyone, it seems! ** A couple of years ago, I drastically reduced gluten and almost no real dairy, and Hubby lost 70 lbs in about 10 months. He kept telling people it just “fell off” and he had no idea why! (so obviously he couldn’t tell the difference in what I made for dinner then ~ and I’d still bake something for him SF so he wasn’t totally deprived). He’s type 2 diabetic and was taken off his meds ever since b/c he’s back to “normal” numbers now! … I personally would eat beef or lamb every night (not a fish fan), but I choose vegetarian if I can’t have that (one of those people who actually likes tofu!). ** Sorry to ramble ……Happy 2025!
