Happy New Year, everyone!
Wow, we’ve made it to the end of the first quarter of this century! How does that make you feel, Fiesta Friends?
Are you excited and elated? Or are you anxious and annoyed? Or maybe you’re happy and hopeful? Or maybe you’re feeling a mix of all these emotions?
To be honest, I’m not quite sure how I feel either. It’s just another year, which means we’re all a year older, that’s all 😁
What about your New Year’s resolutions? I usually start the year with a week (or two) of healthy eating, but since I’ve actually been eating rather healthily for the past few weeks, I decided on a different resolution this year.
I want to prioritize getting more sleep! That’s right, my goal is to add extra hours to my sleep time this year. Getting enough sleep is just as important as eating healthy!
Speaking of healthy eating, look at the Black-Eyed Peas and Greens with Corn Dumplings that I made for my New Year’s Day lunch. You know, for good luck all year long.
I made it vegan by using soy curls instead of smoked turkey or ham hocks and I thought it turned out pretty good. So good, in fact, that I’m considering making it on a regular basis. Black-eyed peas and greens shouldn’t be reserved for just one day a year!
