Fiesta Friday #568

Happy Holidays to one and all!

Whether you celebrate Christmas, Hanukkah, or Kwanzaa, I hope you are enjoying the festivities with your loved ones, indulging in delicious food and drinks, and experiencing pleasant weather, wherever you may be. And of course, I also want to wish everyone world peace!

I wanted to add that last thought because it seems fitting for this time of year, and in light of this year’s events. The sentiment isn’t just a joke, unfortunately.

As for me, I couldn’t have asked for more. I feel blessed that my family is happy and healthy. That’s enough for me.

Anyway, today couldn’t come soon enough for me; it’s the last day of school before the break! As soon as I get home from work, I plan to take a long nap and then start baking a couple of batches of cookies.

I think I’ll be living off cookies for the next week or so, lol. So many cookies, so little time!

What about you, Fiesta Friends? What are you all preparing in the lead-up to the holidays? I’d love to see pictures of all the amazing food I know you’re making!

In return, I’m sharing a picture of the vegan dinner I made for my daughter and myself yesterday.

Marinated Tofu and Red Cabbage Stir-Fry | FiestaFriday.net

You know the saying… I’ll show you mine if you show me yours. 😁

The menfolk refused to partake in the vegan meal and ordered themselves their dinner from Raising Cane’s. If only they knew how good the marinated tofu and red cabbage stir-fry were!

Alrighty, then, I’ll see you all next week! After I gain 10 pounds from all the cookies! 🤣

Features!

Lemon Oreo Lasagna

Festive & Simple Christmas Board

Pizza Pot Pie

Cappuccino Swirl Butter Cookies

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
