Fiesta Friday #545

Omigosh, this heatwave is relentless! I don’t know how you all fare where you are, but I’m practically melting into a puddle in this intense heat. I mostly stay indoors noshing on this vegan charcuterie platter.

Vegan Charcuterie | FiestaFriday.net

Who wants to sit down to a 3-course meal when the weather is this hot, let alone cook such a meal?! Charcuterie is the way to go in this situation. It’s easy to prepare and there’s no cooking involved. It’s an all-day snacking event, how fun is that?!

For me, it’s a godsend since I’m busy enough as it is. I’m trying to clean and organize both the inside and outside of the house to make things easier for our housesitter to manage while we’re gone. In less than 2 weeks, I’ll be embarking on a Southeast Asia & Japan adventure. I can hardly wait!

Features!

Great Northern Bean Summer Caprese Salad

Baobab Energy Bars

Church Ladies’ Favorite Potluck Recipes: Salads

Lamb Penang Curry

Who’s ready for Cinco de Mayo?! I am! 🙋🏻‍♀️ May I suggest celebrating it with this Pineapple Margarita Chicken Quesadilla? You gotta make that Pineapple Margarita first, though. Coz that’s the marinade for the chicken! As if I need to twist any arms. 🤣 The more margarita, the merrier, says people everywhere. 🍸🥳 Link in bio!
