Just 12 more school days until Summer break… woohoo! The end is coming, fast and furious!
It wasn’t until last night when I was discussing our summer travel plan with my husband and kids, that I realized how soon summer would be here. So exciting!
We have an ambitious travel plan this summer. We’ll be exploring Japan, Singapore, and Bali, all in a 2-week span. Ideally, I’d like to spend 2 weeks at each location. Oh, well…
I can’t wait to try all the food! These are quite gastronomically famous places, each with its unique cuisine.
And that’s why last night’s dinner was this simple vegan grain bowl.
Because first, we lose weight… Then we’ll gain it back when we travel, lol.

Have fun on your fabulous trip! Yes, the trips that we really spent time in a country were incredible! We spent a month in Italy (years ago) landing in Milan, and then taking the train all the way down to Venice. Another year, we spent a month in China, with just a few days at the end in Hong Kong. Another year it was a month in East Africa (photographic safaris primarily in Zimbabwe, Kenya & South Africa). And another year it was South America (mostly Brazil {each city is totally different} with a few also in Colombia and Peru. It’s great to immerse yourself in the culture and get to know the people. We found that the best restaurants are just to follow the locals into one!
