You sure can’t rely on Mother Nature these days… or has it always been this way all along? That Mother Nature is unreliable?
I had planned to have salad for dinner every day this week since it felt like summer at the start of the week. The fridge is fully stocked up with lettuce, chicory, endive, spinach, cucumbers, and tomatoes… no, not tomatoes. You don’t put tomatoes in the fridge, do you?
Anyway, just lots of fresh veggies.
But yesterday my body just refused salad. My body needed soup. I got caught in the rain on my way home from work. Drat, I hate that!
So, instead of making them into a salad, I turned the veggies into something like this.
Lettuce soup, anyone?!
Seriously, it’s just Orzo Avgolemono with some of the salad greens added to it – mostly chicory and spinach, along with the stem ends of a couple of endives.
There you go… that’s how you deal with Mother Nature… you turn your salad into soup! 😂
And it was delish! That’s how I like my soup. It’s got to be thick and creamy, with lots of stuff in it to make it interesting.

Hi, Angie! In the UAE, we just experienced the worst storm this country has seen in 75 years! Most parts of the country were literally underwater, and cars were stranded. It was scary, but thankfully, we are slowly returning to normal.
PS: Turning your salad into a soup is genius.👏🏽
