There are two very specific dishes that I want to eat tomorrow. Yusheng aka Prosperity Salad and dumplings.
Why? Because tomorrow is not just another Saturday. Tomorrow is also Lunar New Year’s Day, which marks the beginning of the lunisolar calendar year. Yusheng and dumplings are two iconic dishes that are served on this day – Yusheng in Malaysia and Singapore, and dumplings in China.
The dishes are supposed to bring luck and prosperity year round. Now who wouldn’t want that?!
I haven’t had or experienced Yusheng before and I’m very eager to give it a try. It sounds like a lot of fun. You have to read up on it to know what I mean.
The only problem is I can’t find any restaurant that offers this dish. At least not within driving distance. So if I want to have it tomorrow, I will have to make it myself somehow. I hope it won’t be too hard to put together.
The dumplings are easier to source. A nearby Chinese restaurant that I frequent makes decent ones. I can make my own, too, of course. It takes time to make dumplings but what are Saturdays for if not for tinkering in the kitchen, am I right?!
And in honor of the holiday, maybe I should make the dumplings extra special, by giving them a skirt.
It’s a new-fangled way of serving pan-fried dumplings. Well, new to me, anyway.
We shall see if I can get motivated enough tomorrow to make both of these dishes.

Your comments about “yusheng” intrigued me, since I hadn’t heard of it before. I searched it on Pinterest and found a few posts that call it a “salad”-type dish in general (not a specific dish).
