Fiesta Friday #520

Here’s a great dish that both vegans and non-vegans would go crazy for.

I know because my daughter, who is vegan, and I, non-vegan, both LOVE it!


It’s kimchi fried rice, of course. So flavorful you won’t miss the meat or eggs typically added to fried rice.

I love adding tofu scramble or even cooked lentils along with several kinds of grains and vegetables here for a full meal that satisfies my daily nutritional requirements.

Healthy protein? Check. Whole grains? Check. Vegetables? Check and check. Fruits? Hmm… do tomatoes and peppers count as fruits? They should!

      I had kimchi fried rice in a restaurant a long time ago, but it was too spicy. I can now make it at home after making my own less spicy and most importantly, vegan kimchi. Thanks for co-hosting, Jhuls! 🫶

      Thanks! I’ve been noticing that, too. Kimchi tacos, kimchi chips, etc. Great for people who love spicy food. I have to make my own less spicy kimchi to enjoy it.
