Here’s a great dish that both vegans and non-vegans would go crazy for.
I know because my daughter, who is vegan, and I, non-vegan, both LOVE it!
It’s kimchi fried rice, of course. So flavorful you won’t miss the meat or eggs typically added to fried rice.
I love adding tofu scramble or even cooked lentils along with several kinds of grains and vegetables here for a full meal that satisfies my daily nutritional requirements.
Healthy protein? Check. Whole grains? Check. Vegetables? Check and check. Fruits? Hmm… do tomatoes and peppers count as fruits? They should!

You are doing very good in your vegan dishes, Angie. And I love kimchi fried rice. Happy Fiesta Friday! x

I had kimchi fried rice in a restaurant a long time ago, but it was too spicy. I can now make it at home after making my own less spicy and most importantly, vegan kimchi. Thanks for co-hosting, Jhuls! 🫶

Kimchi is showing up everywhere, great recipe Angie. Thanks for continuing to host and belated Happy New Year.

Thanks! I’ve been noticing that, too. Kimchi tacos, kimchi chips, etc. Great for people who love spicy food. I have to make my own less spicy kimchi to enjoy it.

Hello hello! How are you Angie (& everyone else)? Thought I’d pop by and see what’s cooking over here! Loving the kimchi fried rice idea – one to try for me! If I get time I’ll add to the party, or else I’ll pop by soon with something to share. Fabulous that the Fiesta is still going! Well done!
