Fiesta Friday #515

Now that Christmas is getting nearer and nearer, my attention moves from decorations (I declared them done, whether that’s true or not!) to cookies.

They’re more important, if not the most, anyway, right, the cookies?!

Or is it Santa Claus and the presents?


Or is it family time and togetherness that’s the most important?

Or is it to remember the birth of Jesus, which some scholars argue is not even in December?

After pondering all these questions myself, I’ve decided that cookies are still the most important aspect of Christmas, ha! I might change my mind tomorrow and decide it’s Santa Claus, after all, but today is a long, long way from tomorrow.

The point is today it’s all about cookies! I’m in the process of veganizing my must-make Christmas cookies, preferably all of them but as it stands so far, I’m successful at 2 out of 6.

They happen to be the 2 most beloved of all of my Christmas cookie repertoire, the crowd favorite Salted Chocolate Chip Cookies and my all-time favorite Compost Cookies, here below.

These vegan ones don’t spread out as much but they’re every bit as good as their non-vegan counterparts. I’m already on batch #2 today! Did I mention they’re my all-time favorite?! I probably won’t need to make any other kinds of Christmas cookies. These are all I need!
