Whenever the daughter comes home, I always make sure to stock up on vegan food items or ingredients. Like chickpeas and tofu. She loves those things!
And as usual, I tend to overbuy. Don’t we all, seriously?
So now that she’s gone back to school, I have a tofu problem. The chickpeas are fine since they’re in cans, but tofu? It’s perishable and needs to be consumed moderately quickly.
I suggested tofu burgers, but the husband was like… uhm, I’m fine, you can have the tofu… How generous and gracious of him!
Clearly, he’s not big on tofu. But I can’t eat 4 blocks of tofu by myself! So trickery, I mean compromise, was needed.
I added cubed tofu, browned first in the air fryer, in a dish of Teriyaki Chicken, served on rice.
Each bite of tofu is accompanied by a bite of chicken. Isn’t that what compromise is all about?

I’m not a vegetarian, but one of those people who actually LIKE tofu (if it isn’t beef or lamb, then I’ll order vegetarian at a restaurant), so posted a couple of my favorite tofu recipes for you. Also, you can cut up tiny little cubes and add it to marinara sauce for pasta. My husband is type 2 diabetic and we found out that the tofu actually lowered his blood sugar after eating pasta with the tofu in the sauce! (I guess it counter-acted the carbs in the pasta). … Have a Blessed Holiday season (ALL of them) and fantabulous new year!

What a great idea Angie, camouflage! What did your husband say? Did he notice? My husband has the same thoughts on tofu although they are better in the air fryer when crispy. I may try this out on him.

Guess what?! He liked it! He did detect the tofu but didn’t mind it. I think the key is to season it well, I put more seasonings than my normal.
