Has Mother Nature gone completely insane or what?! It’s now less than two weeks away from spring and we just had a good deal of snow dumped on us. It’s at least 6 inches in my estimation.
Enough to get our schools closed or dismissed early. Which, all in all, is not a bad thing for me, someone in desperate need of extra time in the day to get things done.
With my workplace sending the staff home early and my daughter’s evening activities cancelled, I had time to bake these muffins.
If the weather continues to be this crazy, then maybe there’ll be more school closings, and then maybe I’ll have time to write the recipe and post it.
Considering all that, maybe I shouldn’t be too hard on Mother Nature. Maybe I should thank her, instead.

What, you want snow?! You sure about that? My daffodils were starting to come up- it was nice seeing bits of green after months of brown, but now everything is white, with flecks of dirt ?

Thanks, Trupti! Luckily it’s starting to melt here, but there’s more snow predicted next week! I’m so anxious to go out there in my garden, it’s the best cure for my cabin fever.

It felt like spring a few days ago here in Ontario, but winter is back with snow and cold temps. The weather has been so all over the place the last couple of years. I think we just have to expect the unexpected with Mother Nature. But at least it gives you time to bake muffins!

And there’s another snowstorm predicted next week for us! I hope they’re wrong! I need to get to my garden so bad. But yes, at least with nowhere to go I had time to bake muffins. That’s a plus, I suppose ?

I have to admit the UK is not built for snow, it becomes truly dysfunctional and I prefer it snow free ha ha

Angie there is so much snow here! The last two weeks we had like three blizzards. It seemed like every other day. But the last few days have been sunny, so that helps. But there might be snow tomorrow. Ugggh!!
