As the weather cools, our dinner menu evolves to reflect it. We seem to crave richer, heartier meals – like this weekday Instant Pot roast.

Which is perfectly fine with my husband.
Unlike me, he’s not so into salads. Or vegetables for that matter. Unless they’re cooked to death, lol.
I’m glad he’s enjoying our fall dinners. He works really hard, always in meetings where people pose questions to him and always crunching numbers — like really long equations and stuff.
That’s not to say he doesn’t enjoy his job, by the way, but he does keep long hours.
So anytime I can serve him good, nourishing, home-cooked meals, I feel good about it.
This weekend, though, I’m going to drag him to Panera for some healthy(ish) salads — I have points that will expire soon if I don’t use them. He can always order a sandwich or mac and cheese.
