Is it Quesabirria or is it Birriadilla?

Does it matter, really?! Deliciousness by any other name would taste as yummy, ha!
Anyway, this is what I decided to make with the remaining half of the brisket. And I have Irene to thank for it. She suggested I turn it intoTacos de Suadero, which got me thinking in that direction. Mexico, I mean.
While I didn’t make the suggested recipe, I did keep the Mexican theme. Not because Tacos de Suadero didn’t sound tasty, but I’m more well-versed with birria. I’ve made it several times now, and I feel like I’ve gotten pretty good at it.
Plus, my son loves birria. So does my husband. So do I. My daughter loves it, too, but I usually make hers with green jackfruit instead of beef.
This is exactly why we fiesta every week, right?! To find ideas, to be inspired, and to celebrate life with friends who appreciate good food!
Here are more ideas, inspirations, and good food!

No matter what you call them, they look amazingly delicious! We’d totally scarf them down! Thanks for sharing Mom’s Famous Ice Cream Mississippi Mud Pie this week!
Thanks! Love the sound of that Ice Cream Mississippi Mud Pie!
Hi, Angie! Thank you for hosting another great Fiesta Friday, and for the shout-out in your introduction; I am glad you could find some inspiration from my recipe, and that quesabirria or birriadilla sure looks delish! By popularity, the name is quesabirria, but a purist might say that only if it has cheese, lol. And speaking of the World Cup, this week I am sharing #26 FIFA World Cup 2026- Spain. Champions! A Spanish-Mexican Fusion Menu. Have an awesome week!
You’re welcome! We sure love tacos in our house, especially birria tacos. We do Mexican night at least once a week!
It’s always inspiring to visit Fiesta Friday, thanks so much for an awesome party!
