After a few days of coming home to dinners that looked like this…

…the husband brought home a chunk of beef brisket. A big chunk!
And I was like… What happened to the chicken breast I put on the list?!
And he was like… They’re out of chicken; besides, brisket is on sale.
And I was like… Oh, really?! Really, really?!
Anyway, I ended up cutting the brisket in half and turned one half into this Barbecued Brisket.

But I didn’t grill or smoke it. None of that! It was literally 100 degrees out; no way was I turning on the grill. I cooked it in the Instant Pot instead.
Before you write it off, let me assure you it was very, very good! The key is to season the meat well before pressure cooking it. In this case, I used a homemade dry rub. Then, after it’s properly cooked, slather it with your favorite BBQ sauce and place it under the broiler for several minutes, until it’s nicely browned and the sauce begins to caramelize.
Nobody is none the wiser you didn’t slave over it, seriously.
Now, what do I do with the other half of the brisket? Any ideas?
