Happy early Fourth, Fiesta Friends!
The weather is absolutely brutal here with record-breaking heat and humidity. It’s even led to the cancellation of the annual Independence Day parade, ho hum.
We were originally planning to have an outdoor BBQ for the day, but now it’s probably more prudent to have a relaxed indoor celebration. Still, we definitely want to make it special. It’s America’s 250th birthday, after all.
My daughter, with a little help from me, made this vegan chocolate cake for the occasion.

Isn’t it just so sweet and pretty?! She’s a brilliant baker, I’m telling you. She needs to open a vegan bakery, seriously.
The cake won’t make it until Saturday, I’m afraid. I want to dig in, like right now!
Good thing my daughter also made a Tres Leches cake, now still soaking in its 3-milk bath. Good thing it’s still soaking, or else I’d be diving into that one, too 😂
