It’s bánh mì time!

These are vegan, stuffed with lemongrass tofu. I’ve made them a few times now, and I’m getting closer to perfecting them, hurray!
My vegan daughter thinks they’re very similar to the original, maybe even better.
Here’s the original version with grilled pork.

I like both of them! I’d be happy with either one, honestly. I’ll try to write down the recipe next time I make them so I can share it.

Banh mi is a delicious Vietnamese sandwich and it’s definitely one of my favorite sandwiches. I highly recommend it!
