Mother Nature can’t seem to make up her mind; after reaching a record 90 degrees last week, freezing weather returned early this week.
Unfortunately, I had already moved my houseplants and delicate tropicals outdoors to the patio, and now many show telltale signs of frost damage. I hope they haven’t croaked 😩
Today, things are returning to normal, thank goodness! We’re enjoying beautiful spring weather – sunny and mild, not too cold and not too hot, just right. Hopefully, it’ll stay this way for a while.
This ideal weather makes me want to skip cooking and other kitchen activities. I prefer being outside — taking a walk in the park, browsing garden centers, or even dining al fresco on the deck.
Meals will need to be simple and quick to prepare, like a sandwich. Or I can make a pesto pasta since I put in the effort of making fresh pesto yesterday.
