Are you familiar with this alien-looking, knobby, and yes, ugly vegetable?

It’s a celeriac, or celery root.
In stores, celeriac is usually placed near the horseradish and maybe the rutabaga. All of them seem somewhat neglected and unloved. Well, don’t let that discourage you from cooking with it. You’ll be pleasantly surprised.
It’s good sliced thin and added to salads; its flavor is reminiscent of celery but milder.

It’s even better roasted. Cooking brings out its natural sweetness.

But the best thing to do with it is to add it to mashed potatoes.

I found this intriguing recipe for Celery Root, Red Cabbage and Potato Colcannon from NYTimes Cooking. At first glance, it didn’t quite inspire, but I took a leap of faith and was rewarded with the best mashed potatoes I’ve ever had!
